Prep Cook

Department: Dining Services

Status: Full Time, Non-Exempt

Reports To: Dining Services Director/ Catering Manager

Position Summary:
The Prep Cook assists the chef in preparing the food, maintains a clean and safe cooking environment for all staff members, and takes on culinary tasks as they arise. This position requires physical endurance, mental determination, and the ability to thrive in stressful conditions.

Essential Duties and Responsibilities (other duties as assigned):
➢ Be punctual and able to observe regular and consistent attendance
➢ Contribute to a positive team environment
➢ Measure ingredients and prepare them in accordance to the chef’s specifications
➢ Wash and peel ingredients
➢ Cut and portion different types of meat according to specifications
➢ Prepare different types of food from the menu, carefully following the recipes.
➢ Make stock soups to be used during the cooking process.
➢ Portion the food and prepare the dishes for plating.
➢ Package take-away food for customers
➢ Place food trays under food warmers so that the food arrives in good conditions
➢ Accepts or rejects ingredients from food suppliers, based on their appearance and quality
➢ Keep track of ingredient quantities and ensure there are always enough for the day/week
➢ Store ingredients in dedicated containers, making sure they are properly preserved.
➢ Inform superiors when the ingredients stock is getting low or when the kitchen tools do not work properly.
➢ Clean and sanitize the working surfaces, tools, utensils, and working area according to safety standards.
➢ Carefully supervise the food temperature and the temperature from cooling rooms, to ensure the ingredients are kept at the appropriate temperature.

Requirements:
➢ High School Diploma, GED, or equivalent experience
➢ 2-4 years of related work experience
➢ Knowledge of basic operation of equipment
➢ Flexibility to work around customer demands, including early morning, night, weekend, and holiday availability.
➢ Ability to work in hot, hectic environment as well as stand, walk, bend, and lift heavy items for extended periods.

Salary:
Commensurate with training, education, and experience.
